Low Carb Spicy Shrimp Scampi

Hey, I am back with yet another simple and delicious recipe. I love eating pasta, but I hate the bloating that happens after a bowl of pasta. So I thought maybe it’s time I try homemade veggie noodles. You could literally make your own noodles from any vegetable, zucchini, squash, eggplant, beets, the list goes on… And you know what there’s absolutely no guilt about a healthy low carb, gluten free alternative to whole grain pastas.

To create this fun recipe you will need a spiralizer vegetable slicer. I just so happened to find one at my local Aldi store for $9.99. You can also find plenty of spiralizer vegetable slicers on amazon for a good bargain. If you’re thinking you don’t need anymore kitchen appliances think again, you do! Ha..

You can simply use a spiralizer to quickly and effectively cut your vegetables or to make noodles, curly fries for your kids.. I’m telling you the limits are endless.

The first dish I made with my spiralizer vegetable slicer was a low carb spicy shrimp scampi. This is really a breeze to create this meal in less than 20 minutes.


1-2 Zucchini

1/2 lbs Shrimp

Parmesan cheese

Lemon slices

1 tsp Onion powder

1 tsp Garlic powder

1 tsp Red pepper flakes

1/2 tsp Lemon pepper seasoning

2 tbsp Butter

1-1/2 tbsp Olive oil


First start by adding 1-1/2 tbsp of olive oil in a pan set on medium heat. Allow for the oil to get hot, then add in 1/2 lbs of shrimp and allow the shrimp to brown. While the shrimp are cooking take two pieces of zucchini, cut the ends off each side of the zucchini. Attach zucchini to spiralizer and begin to cutting your zucchini noodles. Back to your shrimp you’re going to want to add in all of your seasonings and butter. Mix shrimp and seasonings, then add in zucchini to pan. Allow for everything to cook for an additional 3-4 minutes. Now you can plate your low carb spicy shrimp scampi, garnish with lemon slices, top with Parmesan cheese. Wallah this completes this delicious low carb spicy shrimp scampi.
